Should herbal materials be extracted with water or with ethanol?

Today let’s talk about a common question we often hear from customers during production:


Should herbal materials be extracted with water or with ethanol?


There are two key factors to consider.



1. First, look at the compounds you want to extract.

If your target compounds are water-soluble, such as polysaccharides, proteins, or amino acids, water extraction is usually the better choice.


If you are targeting compounds like alkaloids, glycosides, or volatile oils, ethanol extraction generally works better.



2. Second, consider the characteristics of the herb itself.

If the herb contains starch or mucilage, or its active compounds dissolve easily in water,water extraction is often suitable.


But if the herb contains lipids, resinous substances, or the active compounds are heat-sensitive, ethanol extraction is usually preferred.



Finally, here’s a simple rule of thumb:

Polysaccharides, proteins, amino acids → choose water extraction

Alkaloids and volatile oils → ethanol extraction


And that’s a quick guide to choosing the right extraction method in botanical processing.
